A Trip for the Senses
An Italian holiday is meant to be savored and experienced by all your senses. See the sites, hear the bustle, touch a piece of history, taste the exquisite cuisine, and of course, smell the alluring aromas of fine Italian cooking.
Restauranteur and foodie Dave Cosentino, has curated five customized Italian holidays throughout 2020. Believing that everyone should have the opportunity to experience Italy, Dave takes guests beyond the typical tourist locations and attractions, and into quaint villages in the heart of the Italian country and seaside for a truly unique and memorable experience.
Dave has been touring small groups around Italy since 1999. He’s travelled there more than 20 times and hosted nearly 200 people as they tour the region and experience the local cuisine.

General notes about Only Italy Tours:
- Space is limited to 20 guest per tour. Book early!
- Each trip includes 3 and 4-star accommodations; all have been visited by Dave or his associate to ensure quality.
- Travel insurance is available for an additional fee.
- All group air, transfers, accommodations and most meals are included in the package price.
- Some evenings are left open so you can explore and relax on your own or with new friends.
- Pre and post tour arrangements can be made through Marilynn.
- Pack light. We visit multiple destinations and you will be responsible for your own luggage.
- All cooking classes and guided tours are conducted in English.
Roman Classic Cooking Holiday
February 15 – 23, 2020
Day 1- Arrival and airport transfer to hotel in Rome city center.
Day 2- Learn to make pasta from scratch and explore four Roman pastas and sauces, Alla Gricia, Cacio e Pepe, Carbonara and Amatriciana.
Day 3- Pizza and bread making. We’ll make dough for crusty pies and multiple sauces and learn to shape dough for focaccia and whole wheat Italian loaves.
Day 4- Roman “secondi” dishes. We begin by visiting the local butcher or fishmonger to purchase ingredients for the day’s main dishes.
Day 5- Dessert day – la dolce vita. Learn to make several classic Italian desserts, mastering the step by step scratch-creation of sweet delicacies.
Day 6- Guided walking tour of Rome’s attractions, including the Pantheon, the Roman Forum, Fontana di Trevi, Piazza Navona, Campo di Fiori and the Spanish Steps.
Day 7- A culinary field trip takes us to an extra virgin olive oil facility and a vineyard.
Day 8- Departure.
Northern Italy Holiday | Verona ~ Bologna ~ Cinque Terre ~ Piemonte ~ Lake Como
April 4 – 18, 2020
Day 1- Arrival in Milan or Venice and transfer to hotel in Verona.
Day 2- Verona walking tour with time for relaxation.
Day 3-Day trip to Venice with guided walking tour and free time.
Day 4- Travel to Bologna with stop in village of Castelvetro for tour and tasting of balsamic vinegars.
Day 5- Walking tour of Bologna featuring local highlights.
Day 6- Travel to Cinque Terre. Stay in Monterosso al Mare, the largest of the five ancient villages along the Adriatic.
Day 7- Tour the five villages by train. Afternoon option to hike from Corniglia to Monterosso or charter a private boat tour along the coast.
Day 8-11- Four-day exploration of Piemonte wine region with stops in Alba, Barolo, Barbaresco and tours of large and small boutique producers.
Day 12- 13- Travel to Lake Como where accommodations afford stunning views over the Lake and Swiss Alps.
Day 14 –Departure.
Roman Holiday | Rome ~ Tuscany ~ Amalfi Coast ~ Naples
May 16 – 30, 2020
Day 1-Arrival in Rome, transfer to hotel in Rome’s historical center.
Day 2- Guided morning walking tour of the historical “must see” destinations in Rome. Optional afternoon Coloseum tour or free time.
Day 3- Optional guided Vatican tour or free day to enjoy Rome.
Day 4- Depart for the Tuscan countryside. Relax with a chianti while savoring the scenery from our accommodations.
Day 5- Day trip to Siena and San Gimignano.
Day 6- Relax at our Tuscan villa.
Day 7- Day Trip to Florence.
Day 8- Tuscan winery tour and tasting, and stops in Montalcino or Montepulciano.
Day 9-12 Depart for Positano on the Amalfi Coast. Day trips to Pompeii, Capri and Nerano.
Day 12- Depart for Naples. Check-in and explore this fascinating city.
Day 13- Walking tour of Naples.
Day 14- Departure.
Southern Italy Holiday | Tropea ~ Sicily ~ Matera
August 22 – September 4, 2020
Day 1- Land at LeMezia Terme Airport- 1 hour Transfer to Tropea Calabria. Check into Hotel Relax, Group Dinner this evening.
Day 2- Lounge on the Tropea’s stunning beaches by day and stroll the city streets by night. Take in a stunning sunset on one of the cliffs overlooking the sea.
Day 3- Enjoy a full day cruise aboard the Blue Ocean motorboat to discover one of the most beautiful stretches of sea in Calabria.
Day 4 – Visit the Benedectine Sanctuary of Santa Maria dell’Isola. Relax on the beach or explore the city shops and sights of Tropea.
Day 5 Take a ferry to Sicily and drive to Taormina, where we will stay for 6 nights.
Day 6&7 – Visit luxury boutiques along the Corso Umberto, the street that crosses the center of Taormina, and enjoy panoramic views of Mt. Etna.
Day 8 – Mt. Etna Winery tour and lunch. Here, on the coast of Sicily, winemakers are experimenting with native Nerello grapes in black volcanic soil.
Day 9 – Day Cruise to the Aolian Islands.
Day 10 – Visit Palermo, Monrele and Cefalu at the northern section of the island.
Day 11 – Ferry to Mainland-Reggio-Calabria and drive to Matera.
Day 12 – Discover Matera. On a remote corner of southern Italy, this UNESCO World Heritage Site is still relatively unknown but boasts incredible caves.
Day 13 – Depart Matera for Hotel near LeMezia Terme Airport

Gourmet Cooking Holiday | Bologna
November 7-15, 2020
Day 1- Arrival with transfers to hotel in Bologna city center.
Day 2- Cooking class featuring the preparation of a variety of pastas and different cuts, as well as a variety of sauces to prepare with fresh pasta.
Day 3- Visit to the Mercato di Mezzo in the heart of Bologna to source ingredients for our instruction on the classic dishes of Bolognese cooking.
Day 4- Another market trip precedes the day’s lesson featuring traditional Emiliani foods.
Day 5- Free day to explore the vibrant city of Bologna, including a walking tour.
Day 6- Walk the hills of Grasparossa with guided vineyard tours. Tours and tastings at a historical Acetaia in Castelvetro to learn about Balsamico di Modena production.
Day 7- Witness the entire Parmigiano-Reggiano cheese making production, including farm and storage room tours. Lunch at the site of a vintage Maserati car collection.
Day 8- Departure.
